Brown Butter Blondies

INGREDIENTS

1 cup butter, 2 sticks

1 1/2 cups packed brown sugar

2 eggs

1 tablespoon vanilla extract

2 2/3 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon salt

1 cup white chocolate chips, butterscotch chips, semi-sweet chocolate chips, or a fun mix (pictured I used a mix of white chocolate chips & butterscotch chips)

DIRECTIONS

Preheat the oven to 350°.

Brown the butter in a heavy bottom sauce pan over medium heat. Simmer for around 5 minutes, swirling the pan often. When the butter turns an amber golden color and has a nutty aroma, it’s done. Remove from the heat and allow to cool for at least 5 minutes.

With an electric mixer, mix together the butter, brown sugar, eggs, and vanilla.

Add the flour, baking powder and salt. Stir just until combined. Add the chips of choice and stir until smooth.

Line a 9x13 pan with parchment paper and press the dough into the pan. Bake for 20 to 25 minutes, until a toothpick comes clean and the edges are lightly golden brown. Be careful not to over bake.

Allow to cool slightly in pan and then carefully lift the blondies out of the pan with the parchment paper and allow to cool a bit more. Once cooled enough to cut into squares, dive in!
