Breakfast Power Cookies

These cookies were a huge hit with my little tots and I loved them as well! They reminded me of a dense baked oatmeal, but I prefer the cookie shape and texture.

They are slightly sweetened with maple syrup, which you can add a smidge more if you want them sweeter. Another delicious addition would be some dried fruit: cherries, raisins, or cranberries!

Breakfast Power Cookies

INGREDIENTS

1/2 cup of ground flax seed 1 grated apple, skin left on

2/3 cup peanut or almond butter

1/2 cup maple syrup

1/2 melted coconut oil

2 teaspoons vanilla extract

2 cups rolled oats

1 cup oat, kamut, or almond flour

1 cup unsweetened coconut flakes

1/2 cup chopped pecans or peanuts

1/4 cup hemp hearts

1/4 cup sunflower seeds

2 teaspoon cinnamon

1 teaspoon baking powder

1/4 teaspoon salt


DIRECTIONS

Preheat the oven to 350°.

In a small bowl mix the flax seeds with 1/2 cup of water. Set aside.

In a medium bowl mix together the wet ingredients: grated apple, nut butter, maple syrup, coconut oil, and vanilla. Add the flax seed mixture and stir to combine.

In a large bowl mix the dry ingredients: rolled oats, flour, coconut flakes, nuts, hemp hearts, sunflower seeds, cinnamon, baking powder, and salt.

Pour the wet ingredients into the dry ingredients and mix until well combined.

Using a large scoop, scoop 12 large mounds of dough on a large baking sheet lined with parchment paper. Use your fingers to lightly flatten each cookie. Bake for 18 minutes, let cool and enjoy!
