Simple Breakfast Bake

A fast and easy breakfast option that your Littles will love! You can add absolutely any vegetables that you have on hand, making this an easy recipe to adjust with the seasons! It’s simply a great base to start with!

Simple Breakfast Bake

INGREDIENTS

12 eggs

1 cup sour cream

1/4 cup whole milk

2 pounds pork sausage

1/2 onion, diced

1 red bell pepper, diced

1 green bell pepper, diced

2 cups shredded cheddar cheese

DIRECTIONS

Preheat oven to 350°.

In a medium bowl, whisk together the eggs, sour cream, and whole milk, with 1 teaspoon of salt and 1/4 teaspoon of pepper. Set aside.

In a large skillet over medium heat, brown the pork sausage, breaking it up into small pieces. Once browned, add the onions and peppers with 2 teaspoons of salt. Sauté until the onions and peppers soften, about five minutes.

Pour the meat mixture into a 9 x 13 baking dish. Pour the eggs evenly over top.

Sprinkle the shredded cheddar cheese evenly over the top of the eggs.

Bake for 35 to 40 minutes until golden brown and the eggs have fully set & enjoy!
